Gluten Free Snickerdoodles

Gluten Free SnickerdoodlesIngredients:
1 1/2 cups sugar
1 cup butter, softened
1 tsp vanilla extract
2 eggs
2 3/4 cups Sugar & Spice Market Gluten Free All-Purpose Flour
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
2 Tbsp sugar, reserved for rolling
2 tsp ground cinnamon, reserved for rolling

Directions:
Preheat oven to 400°F (205°C).  Combine 1 1/2 cups white sugar, butter, vanilla and eggs, mix well.  Stir in flour, cream of tartar, baking soda and salt, blend well.  Shape dough into 1″ balls.  In small bowl, combine 2 tablespoons sugar and 2 teaspoons ground cinnamon.  Roll dough in sugar/cinnamon mixture and place 2 inches apart on ungreased baking sheets.  Bake 8 to 10 minutes or until set.  Immediately remove from cookie sheets to cool.   Makes 4 dozen cookies.
