2 cups gluten free all purpose flour
3 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp of each cinnamon, ginger, cloves & nutmeg
1/2 tsp salt
1 1/2 cups buttermilk or milk
1 cup pumpkin puree
4 Tbsp butter or oil
In a bowl, mix together all ingredients until combined.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Using Sugar & Spice Market’s Pancake Mix:
Prepare as directed on package for 1 cup mix, add the following ingredients before mixing:
1/2 cup pumpkin puree
1 Tbsp Brown Sugar
1/8 tsp of each cinnamon, ginger, cloves & nutmeg
