Gluten Free Graham Crackers

2 1/2 cups gluten free all purpose flour (plus extra for dusting)
1 cup packed dark brown sugar
1 tsp baking soda
1/2 tsp salt
6 Tbsp cold cubed butter
1/3 cup honey
5 Tbsp milk
2 Tbsp vanilla
2 Tbsp sugar (optional)

Preheat oven to 350F.

Combine the flour, brown sugar, baking soda, and salt in a food processor. Add the butter and pulse until the mixture is crumbly.

In separate bowl, mix the honey, milk, and vanilla and add to the flour mixture. Continue to mix on low or pulse until a sticky dough begins to form. Place dough in the refrigerator and chill for 20 min, to make it easier to work with.

On a floured work surface roll out dough about 1/8 inch thick.  Add flour as needed to prevent sticking. Cut the rolled out dough into squares. Place the squares on baking sheets.  Sprinkle with sugar (optional). Bake for 23-27 minutes, or until crackers are brown and slightly firm to the touch.
