Gluten Free Banana Oatmeal Pancakes from ScratchIngredients:
1/2 cup gluten free all purpose flour
3/4 tsp baking powder
1/4 tsp baking soda
1 Tbsp sugar or Agave
pinch salt
1/2 cup oatmeal
1 ripe banana, mashed
1 egg
2 Tbsp butter, melted or oil
3/4 cup milk

Directions:

  • In a bowl, mix together all dry ingredients set aside.
  • Combine all wet ingredients and add to dry ingredients. Mix until completely incorporated.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot
